Pear, Almond and Chocolate Cake

The PEAR, ALMOND AND CHOCOLATE CAKE is a homemade dessert, simple but with an unmistakable and truly delightful taste. Made without butter, with very little oil and a base of Greek yogurt, it is an honest, soft and indulgent cake, excellent both for breakfast and for a snack. A cake for many occasions, in short, always much appreciated.

Indeed, the pear cake, which remains crisp on the outside but slightly moist inside thanks to the rich filling of fresh fruit, is always liked by everyone, and the combination with almonds, and especially with chocolate, increases its richness and enhances its goodness.

This recipe is a reinterpretation of my APPLE AND YOGURT CAKE, to which I added, besides chocolate chips, almonds ground into flour that make the batter even more aromatic and indulgent.

Ingredients

  • 2 eggs (medium, at room temperature)
  • 3/4 cup granulated sugar
  • 1 pinch salt
  • 2 1/2 tbsp sunflower oil
  • 2/3 cup Greek yogurt (0% fat)
  • 1 1/2 cup all-purpose flour
  • 1/3 cup almonds (toasted and ground)
  • 1 tbsp baking powder
  • 1 Abate pear (firm)
  • 1/4 cup dark chocolate chips
  • 2 Abate pears (firm)
  • 1 tbsp granulated sugar
  • 2 tsp dark chocolate chips

FOR THE PEAR, ALMOND AND CHOCOLATE CAKE YOU’LL NEED

  • 1 Bowl
  • Electric beaters
  • 1 Sieve
  • 1 Springform pan
  • 1 Chopper

PREPARATION PEAR, ALMOND AND CHOCOLATE CAKE

  • To prepare the PEAR, ALMOND AND CHOCOLATE CAKE first toast the almonds in an oven preheated to 356°F for 10 minutes. Then remove them, let them cool, place them in the chopper and grind them finely.

    Put the eggs, sugar and a pinch of salt in a bowl and whisk them with electric beaters until very frothy and light. Then add the oil in a thin stream, the Greek yogurt at room temperature and mix well to combine.

  • Add the sifted flour with the baking powder and the almond flour.

    Combine everything until you obtain a smooth and homogeneous batter. Finally add one pear cut into cubes and the dark chocolate chips.

  • Pour the batter into a springform pan, preferably 8 in, greased and floured. Decorate the surface with pear slices (no need to peel), 1 tablespoon of granulated sugar and the dark chocolate chips.

    Bake in a preheated oven at 356°F and bake for 50-55 minutes. As always, check the baking by inserting a skewer into the center of the cake: it should come out dry.

  • Remove the pear, almond and chocolate cake from the oven, let it cool completely then remove it from the pan and sprinkle with powdered sugar.
