Pork Chops with Grapes

in

The PORK CHOPS WITH GRAPES are a tasty and distinctive main course from the peasant tradition, combining a delicate cut of meat with a sweet, juicy fruit, perfect for creating a fragrant accompanying sauce. It’s a simple and quick dish, but one that can surprise diners and offer a gourmet course at low cost.

The “braciola” is a classic cut of pork, but it is tender and flavorful only if cooked properly, making sure the meat cooks through without becoming dry or stringy. It also needs a sauce to accompany it, and the fragrant, sweet seasoning of the grapes is truly perfect, together with the strong aroma of rosemary, which is always ideal with pork.

If you follow the recipe, the dish will be well balanced and rich, able to highlight the ingredients and offer original yet harmonious flavors.

Ingredients

  • 4 pork chops
  • 1 clove garlic
  • 1/3 cup white wine
  • 2 cups white grapes (seedless is better)
  • as needed extra virgin olive oil
  • 1 sprig rosemary
  • to taste salt
  • to taste black pepper
  • as needed all-purpose flour

Tools

  • 1 Skillet

Steps

  • Preparing the PORK CHOPS WITH GRAPES is very simple and quick. In a large skillet place a generous drizzle of oil and the clove of garlic. Put over heat and let it infuse over low heat.

Remove any bone fragments from the pork chops, then coat them in flour, covering them evenly, and shake off any excess.

  • When the oil is flavored, place the chops in the skillet and, over medium heat, let them brown first on one side and then the other. It will take about 10 minutes.

Deglaze with the wine and let it evaporate.

Add to the skillet the grape berries, seeded (I used seedless grapes) and halved, the rosemary, season with salt and pepper, and add a little water, which, in addition to cooking the meat, will allow you to obtain a tasty little sauce.

  • Cover with a lid and cook for another 5 minutes. Do not overcook, otherwise the meat will become tough and stringy.

When cooked, plate the pork chops with grapes, spoon the sauce over them and enjoy them piping hot.
