Scones are a type of baked good typical of Scotland. I had often heard about them and seen them prepared on many food programs, and I finally decided to try them. These savory scones are tasty, easy to make, use instant rising agents, and are perfect for children.
They are like flavorful little rolls flavored with Parmesan and aromatic herbs that I see great for an aperitif with friends or for children’s parties, perhaps filled with ham or cheese, or for adults with smoked salmon or flying fish roe.
In their sweet version they usually accompany tea and can be served with butter and jam, honey, or lemon curd. There are many versions of scones: with raisins, chocolate chips, blueberries, or savory.

- 1 3/8 cups all-purpose flour (00)
- 2 teaspoons instant baking powder (for savory preparations)
- 3 oz grated Parmesan (about 3/4 cup)
- to taste black pepper
- 1/4 teaspoon salt
- 2 tablespoons cold butter
- 2 teaspoons aromatic herbs (rosemary, thyme, oregano)
- 1 egg (medium, at room temperature)
- 3 tablespoons milk
- 1 egg (for brushing)
- 1 tablespoon milk
- to taste grated Parmesan

Steps
The preparation of SAVORY SCONES is very easy and quick.
First, preheat the oven to 428°F. Line a large baking sheet with parchment paper.
In a large bowl sift the flour and the baking powder. Add the Parmesan, salt and pepper. Then add the butter and work the mixture until it resembles breadcrumbs. Add the herbs.
Meanwhile, beat the egg with the three tablespoons of milk and add it to the dry mixture. Work everything until you obtain a uniform dough. Once you have a ball, transfer it to a lightly floured surface and shape it into a small log.
Cut the log into slices about 3/8 inch (approximately 1 cm). Place the scones on the baking sheet, brush the surface with the beaten egg and a splash of milk, then sprinkle additional Parmesan on top.
Place them on the middle rack of the oven and bake for 10-12 minutes, until they are a nice golden color.
Remove the savory scones from the oven and let them cool slightly before eating.
