- 3 Eggs (medium, at room temperature)
- 7 tbsp Sunflower oil
- 3/4 cup Milk
- 1 3/4 cups All-purpose flour
- 2 1/2 tsp Instant baking powder (for savory preparations)
- 3 oz Smoked pancetta
- 3 oz Gorgonzola (sharp)
- 1/2 cup Walnut halves (coarsely chopped)

Preparation
Preparing the gorgonzola, pancetta and walnut savory ring is very quick and simple. First, put the milk (about 1/3 cup) and the gorgonzola in a small saucepan and melt completely, stirring with a whisk or a wooden spoon. Once melted, let it cool.
In a bowl, lightly beat the eggs, add the cold milk (about 7 tbsp) — the milk in which you dissolved the gorgonzola — the sunflower oil, a pinch of salt, a grind of pepper and mix everything together.
In another large bowl sift the flour with the baking powder. Add the egg mixture and stir.At this point add the pancetta cut into cubes and the walnuts, previously toasted for a few minutes in the oven and coarsely chopped.
Butter and flour an 8 in bundt pan, pour in the batter and level the surface.
Bake your gorgonzola, pancetta and walnut savory ring in a preheated conventional oven at 356°F for about 25-30 minutes. Once baked, remove from the oven and let it cool completely before unmolding.
I recommend eating it warm, but it is also good cold. If you have leftover slices you can freeze them and take them out when needed, thawing them in the microwave or oven.
