Ingredients
- 1 roll shortcrust pastry (pâte brisée)
- 4 zucchini
- 13 oz mozzarella
- 5.3 oz cooked ham (or mortadella)
- 2 tablespoons breadcrumbs
- 2 tablespoons Parmesan
- to taste salt

Steps
To prepare the SAVORY TART WITH ZUCCHINI, HAM AND MOZZARELLA, wash, dry and trim the zucchini. Then slice them about 3 mm thick (about 1/8 inch). Heat a grill, sprinkle it with fine salt and grill the zucchini. Set them aside.
Cut the mozzarella into cubes and squeeze them lightly so they don’t release too much water during baking.
Line a baking dish with the shortcrust pastry without removing the paper it’s wrapped in. Prick the base with the tines of a fork and sprinkle it with the breadcrumbs.
Make a layer of zucchini, season them lightly with salt, then cover with two slices of ham and the mozzarella.
Continue layering until the ingredients are used up (the last layer should be mozzarella) and sprinkle with Parmesan.
Trim the excess pastry and bake in a preheated static oven at 374°F for 40–45 minutes. Place the baking dish on the second-to-last rack so the base cooks properly and doesn’t remain soggy due to the mozzarella releasing water during baking.
As soon as it is nicely golden, turn off the oven and let it cool slightly before cutting and serving.
