Shrimp Toast

FRIED SHRIMP TOAST are a delightful dish typical of Chinese cuisine, rich in flavor and aroma, perfect to serve piping hot as an appetizer or aperitif, perhaps accompanied by a nice glass of bubbles.

The recipe is very easy and quick to prepare and is therefore also an excellent solution if guests arrive unexpectedly. And, despite the exotic origin, the taste is much appreciated by everyone, given the simplicity of the ingredients and the goodness of the fried pieces…

Ingredients

  • 8 slices sandwich bread (pancarrè)
  • 9 oz shrimp
  • 1 egg white
  • 2 tbsp cornstarch (maize starch)
  • 2 tbsp soy sauce
  • 1 spring onion (or half an onion)
  • to taste sesame seeds
  • peanut oil (for frying)

Steps

  • Preparing the SHRIMP TOAST is really easy and takes just a few minutes. First, clean the shrimp, removing the shell and the vein. Then place them (frozen ones will also work if left in cold water for 5 minutes and well drained) in the food processor together with the soy sauce, the spring onion or onion and the cornstarch.

    Blend everything until very fine.

  • Meanwhile, whip the egg white with a pinch of salt until stiff peaks form. Add the shrimp mixture and very gently fold it in, mixing from the bottom up so as not to deflate the mixture.

    Spread the creamy mixture obtained over the slices of bread, sprinkle the surface with sesame seeds and then cut them in half to get two triangles.

    Pour oil into the pan to a depth of about two finger-widths and, once it is hot, fry your shrimp toasts until golden brown.

    As with all fried foods, serve them very hot and crispy.
