Spaghetti with asparagus and lime

Ingredients

  • 14 oz spaghetti
  • 11 oz asparagus
  • 1 clove garlic
  • 2 limes (or lemons)
  • to taste extra virgin olive oil
  • to taste salt
  • to taste black pepper
  • 2 oz grated Parmesan cheese

Steps

  • Rinse the asparagus under running water and remove the tougher, woody ends. Then slice them on the diagonal and cut the stalks in half.

    In a pan, gently brown one clove of garlic in the oil. Add the asparagus, season with salt and pepper, and cook for 5 minutes. Add half a glass of water and continue cooking for another 10 minutes.

  • Turn off the heat and add the lime juice and grated zest, being careful not to grate the bitter white pith.

    Meanwhile, cook the spaghetti in plenty of boiling, salted water. Drain them while still al dente and place them in the pan with the asparagus together with two or three ladlefuls of the pasta cooking water.

    Finish cooking, then with the heat off add a drizzle of oil, the Parmesan and toss until you obtain a creamy sauce. If necessary, add more pasta cooking water.

  • Plate the spaghetti with asparagus and lime and finish with a grating of Parmesan and, if you like, additional lime zest and pepper.
