Spaghetti with garlic, oil, chili and king prawns

in ,

GARLIC, OIL, CHILI AND KING PRAWNS is a classic of Italian culinary tradition, loved for its simplicity and its intense flavor, slightly revisited and finished with a refined touch that makes the dish worthy of being served as a main course at a lunch with friends.

The goodness of this dish lies in the perfect balance of aromas and flavors: the intense scent of garlic and the spiciness — yet with a sweet background — of the chili pair wonderfully with the sweetness and meaty texture of the king prawns, enhancing their taste.

As with all simple dishes, pay attention to the details: high-quality spaghetti cooked al dente, chili that is spicy but not excessive (otherwise it would overpower every other flavor), and, above all, fresh and tasty king prawns. It only takes a few minutes, with no effort — especially if you follow the step-by-step photo recipe below — and you’ll have a first course truly worthy of applause.

  • 2 hot chili peppers
  • 5 oz king prawns
  • to taste salt

YOU’LL NEED THE FOLLOWING FOR GARLIC, OIL, CHILI AND KING PRAWNS

  • 1 Frying pan
  • 1 Pot
  • 1 Cutting board

PREPARATION: GARLIC, OIL, CHILI AND KING PRAWNS

  • The preparation of garlic, oil, chili and king prawns is very easy and quick.

Chop the garlic cloves and the chilies (remove the seeds if you don’t want the dish too spicy) into thin slices.

Heat the extra virgin olive oil in a frying pan and add the garlic. Cook for 1 minute, then add the chilies. Sauté over low heat so they release their aroma. It is important to be careful not to brown the garlic, otherwise it may become bitter.

Clean the king prawns by removing the shell and the vein.

  • Add them to the seasoning and cook for 30 seconds. Turn off the heat and set aside.

Boil the spaghetti in salted boiling water. Drain them still al dente into the pan with the seasoning, along with a few ladles of the cooking water.

  • Toss well to create a light sauce, plate up and enjoy their simple goodness. If you like, sprinkle with chopped fresh parsley for a touch of freshness and color.
