PREPARATION OF GARLIC, OIL, CHILI AND PRAWNS

  • The preparation of garlic, oil, chili and prawns is very easy and quick.

    Chop the garlic cloves and the chilies (remove the seeds if you don’t want a very spicy dish) into thin slices.

    Heat the extra virgin olive oil in a pan and add the garlic. Cook for 1 minute, then add the chilies. Sauté over low heat so they release their aroma. Be careful not to let the garlic brown, otherwise it can become bitter.

    Clean the prawns by removing the shell and deveining them.

  • Add them to the sauce and cook for 30 seconds. Turn off the heat and set aside.

    Boil the spaghetti in salted boiling water. Drain them while still al dente into the pan with the sauce, adding a few ladlefuls of the cooking water.

  • Toss well to create a light sauce, plate and enjoy their simple goodness. If you like, sprinkle with chopped fresh parsley for a touch of freshness and color.
