  • 12 oz yellow cherry tomatoes
  • 4 oz smoked pancetta
  • 1 clove garlic
  • as needed extra virgin olive oil
  • to taste salt
  • to taste black pepper

Steps

The preparation of SPAGHETTI WITH YELLOW CHERRY TOMATOES AND PANCETTA is very easy and quick.

  • In a large frying pan with a drizzle of oil, sauté the pancetta, cut into cubes, over medium heat until it becomes golden and crispy. Remove it and set it aside.

    In the same pan add the garlic and let it flavor the oil for 1 minute. Add the yellow cherry tomatoes cut in half, season with salt and pepper and let them soften for 6-7 minutes.

  • Add a few torn basil leaves and continue cooking for another 5 minutes. Add the pancetta back in and let it infuse its flavor.

    Cook the spaghetti in plenty of salted water and drain them al dente, reserving a ladle of the cooking water.

    Drain the spaghetti into the pan with the tomatoes, add a little of the reserved cooking water, a drizzle of extra virgin olive oil (raw) and toss the spaghetti to coat them.

  • Plate and serve your spaghetti with yellow cherry tomatoes and pancetta hot, garnished with more fresh basil.
