SPONGE CAKE: tall and super fluffy

The SPONGE CAKE is an extremely soft and spongy sweet dough commonly used in pastry. Everyone has their own recipe passed down through generations. This is mine and the result is always guaranteed.

The sponge cake batter is prepared cold by mixing in a bowl a small amount of sifted flour or potato starch, sugar, egg yolks and egg whites, very fresh and at room temperature, beaten to very stiff peaks. Thanks to this preparation the dessert is spongy and soft because of the large presence of eggs: the traditional recipe, in fact, does not call for leavening agent. If you want to make your sponge cake even more tempting you can make it with cocoa.

Ingredients

  • 5 eggs (medium, at room temperature)
  • 3/4 cup granulated sugar
  • 5/8 cup all-purpose flour
  • 5/8 cup potato starch
  • 1 pinch salt

Steps

  • To prepare the SPONGE CAKE first of all use eggs at room temperature.

    Separate the egg whites from the yolks and place them in two bowls. Using an electric mixer, beat the egg whites to stiff peaks with a pinch of salt.

    Beat the yolks with the sugar for 10 minutes, until you obtain a pale and frothy mixture.

    At this point add the sifted flour and potato starch and fold them into the mixture.

  • Carefully fold the egg whites into the yolk mixture and, using a spatula, mix from top to bottom so as not to deflate the batter.

    Grease and flour thoroughly (or line with parchment paper) an 8-inch springform pan.

    Pour the batter into it and level it with the spatula. Bake the sponge cake in a preheated conventional oven at 356°F for 40 minutes.

  • Once baked, let the sponge cake rest in the oven with the door slightly ajar for 5 minutes, then remove it and let it cool slightly, then unmold and let it cool completely — even better if you do this on a wire rack so the base cools well.
