Stewed Turkey Osso Buco with Potatoes and Tomatoes

in

The STEWED TURKEY OSSO BUCO WITH POTATOES AND TOMATOES is a simple and quick main course to prepare: honest and flavorful, one of those family-tradition dishes that always manage to bring a smile to the table. It’s a complete main dish, suitable for any circumstance and, importantly these days, budget-friendly while still ensuring a perfectly balanced nutritional contribution.

To enhance this simple dish, besides the aromatic herbs thyme and rosemary, there are onions and cherry tomatoes that add a sweet and slightly acidic note that pairs wonderfully with the delicate turkey meat and the potatoes, which absorb flavors and aromas. The dish is thus well balanced and very appetizing, ready in little time and with little effort, yet with character — as only dishes from our humble culinary tradition can have.

Ingredients

  • 4 turkey osso buco
  • 2 potatoes (large)
  • 4.4 oz (about 3/4 cup) cherry tomatoes
  • 1/2 glass white wine
  • 1 yellow onion
  • to taste extra virgin olive oil
  • 1 sprig rosemary
  • to taste thyme
  • to taste salt
  • to taste black pepper
  • as needed flour

Tools

  • 1 Pan
  • 1 Knife

Steps

  • The preparation of STEWED TURKEY OSSO BUCO WITH POTATOES AND TOMATOES is very simple.

First, slice the onion and sauté it in a saucepan with the oil.

Dredge the turkey osso buco, after removing any bone fragments, in flour on all sides, then shake off the excess flour and place them in the pan.

Let them brown for a few minutes on all sides to seal the meat, then deglaze with the white wine.

  • Add the cleaned potatoes cut into large chunks, the thyme, the rosemary and season with salt. Add enough water to cover the meat, cover with a lid and let simmer for 25–30 minutes over low heat. Turn the osso buco halfway through cooking.

A few minutes before turning off the heat add the tomatoes cut into slices or halved, season with pepper and continue cooking (adding more water if necessary).

  • Once your stewed turkey osso buco are cooked, plate them, spoon over the sauce that has formed and enjoy them while hot.
