- 1/2 cup (packed) brown sugar
- 1/2 cup butter (cold)

- 3 tbsp brown sugar

- 1/3 cup walnut halves, chopped

Steps
The preparation of these WHOLE-WHEAT MINI APPLE TARTS is really very simple and suitable for everyone.
Place the flours, cinnamon, cold butter cut into pieces, sugar and a pinch of salt in a bowl or in the bowl of a stand mixer (with the paddle). With your fingertips, quickly and without overheating the butter, combine the ingredients until you obtain a sandy mixture.
Add the egg and incorporate it until you get a homogeneous dough.
Wrap the shortcrust pastry disk in plastic wrap and let it rest in the refrigerator for at least 30 minutes.Soak the raisins in water for 15 minutes. In the meantime, peel the apples, remove the core and cut them into fairly small cubes. Place them in a bowl, sprinkle with lemon juice to prevent browning and add the brown sugar and cinnamon.
Stir everything and let rest for 20 minutes.
Place a small piece of butter in a nonstick skillet, melt it and add the apples. Cook over medium heat for 10 minutes or until the juices have reduced and the apple cubes have taken on an amber color.
With the heat off, add the drained raisins and the chopped walnuts and mix everything together.Take the pastry disk out of the fridge and work it briefly to make it pliable again.
Lightly dust the work surface with flour and roll the dough to a thickness of about 3 mm (about 1/8 inch).
Line removable-base tart tins approximately 4 in (10 cm) in diameter, prick the base with the tines of a fork and fill them with the filling. Press down to compact and decorate the surface with the classic lattice of dough.Bake in a preheated conventional (non-fan) oven at 356°F for 25 minutes. When they are slightly golden, remove them from the oven and let them cool completely before devouring them.
