- 1 tbsp sesame oil
- to taste Sichuan pepper
- 2 tbsp ponzu sauce
- 1 clove garlic
- 1 fresh scallion (White)
- 1 bunch cilantro (Or parsley)

Remove them from the package. Enoki mushrooms are usually sold in packages to preserve their freshness and integrity. Cut the stem, removing the end part of the stem, about 3/4 inch from the root, using a sharp knife. Rinse them gently under cold running water to remove any impurities.
Next, add to the pan and sauté over high heat one finely chopped clove of garlic, one finely chopped white scallion, Sichuan peppercorns (optional), and fresh chopped cilantro (or parsley). Stir continuously for 2-3 minutes, until the ingredients are fragrant and the scallion is softened. If you prefer, you can substitute cilantro with parsley and Sichuan pepper with black pepper.
Add the enoki mushrooms to the sauté and stir to flavor them with the oil and spices. Cook over high heat for 2-3 minutes, stirring continuously, until the mushrooms are slightly softened. This way, the mushrooms will blend well with the sauté and release their flavor.
Once the enoki mushrooms are softened, I added a teaspoon of oyster sauce and 2 tablespoons of ponzu sauce to balance the flavor. The result is a savory dish with a slight touch of acidity. The savory flavor of the oyster sauce is well balanced by the slight acidity of the ponzu sauce.
Finally, mix everything and cook over high heat for another two minutes, just enough time to blend all the ingredients well. After turning off the heat, let it rest in the pan for about ten minutes to bring out all the aromas of the pepper and spices.
