Clean and cook the snow peas
To start making pasta with snow peas and cherry tomatoes, first, put the pasta water to boil, so while waiting for it to boil, we prepare everything we need to make this fantastic summer dish, simple, quick, and tasty.
Now while the water boils, we clean the snow peas by removing only the two tips and cut them into chunks according to the size we prefer. After washing them thoroughly, we cook them in the boiling salted water.
While the snow peas are cooking, I prepared the basic ingredients for the sauce to dress the pasta by halving some yellow and red cherry tomatoes, a half red onion, and chopping fresh mint leaves.
In a non-stick pan, I poured extra virgin olive oil and sautéed the onion and crushed garlic for a few seconds to avoid burning the garlic.
Then I added all the cherry tomatoes, mint, salt, and cooked everything for 10 minutes on high heat before adding the snow peas, which should be ready by now.
As soon as the snow peas are ready, I add them directly to the pan with the sauce and let them cook to flavor everything while we cook the pasta in the same water where we boiled the snow peas.
In conclusion, to make it even creamier and tastier, I drain the pasta directly into the pan a few minutes before the cooking time indicated on the package.
Now in the pan, we add some cooking water as needed until it is cooked to the desired point.
