Ingredients
- 1.1 lbs ravioli
- 3.5 oz butter
- 0.07 oz coarse salt
- 5 leaves sage
Tools
- 1 Pot
- 1 Pan
Steps
Bring a large pot of salted water to a boil. Add a tablespoon of coarse salt for each liter of water and add the ravioli to the boiling water. Stir gently to prevent them from sticking and cook the ravioli for 6-7 minutes, or for the time indicated on the package. The ravioli are ready when they rise to the surface.
While the ravioli are cooking, melt a knob of butter over medium heat in a non-stick pan. Use a spoon to properly grease the entire surface of the pan. Add the rest of the butter and let it melt completely. Do not burn the butter, or the flavor of the seasoning might become bitter.
When the butter is completely melted, add the fresh sage leaves to the pan. Let the sage brown for a few minutes over medium-low heat, until it becomes crispy. Be careful not to burn the sage, or the flavor of the seasoning might become bitter.
Now drain the ravioli directly from the pot of boiling water into the pan with butter and sage. Toss gently to combine the seasoning, moving the pan in a circular motion to avoid breaking the ravioli. If the seasoning is too dry, add some cooking water from the ravioli, a tablespoon at a time, until you reach the desired consistency. Cook for a couple of minutes, no more, to prevent the ravioli from becoming overcooked.
The ravioli with butter and sage with melting mozzarella hearts are ready to be plated and served while still hot. Sprinkle them with grated Grana Padano before savoring them. Enjoy your meal from DadCook!
Wine pairing for ravioli with butter and sage with melting mozzarella hearts:
For the ravioli with butter and sage with melting mozzarella hearts, we recommend a fresh and aromatic white wine, such as a Ligurian Vermentino or a Sauvignon Blanc from Friuli Venezia Giulia. If you prefer a red, opt for a light Pinot Noir or a young Barbera d’Alba. In both cases, choose a wine with good acidity to contrast the creaminess of the dish. Avoid wines that are too tannic or structured, as they could overpower the delicate flavor of the ravioli. Let your personal taste guide you and choose the wine that you think pairs best with your palate and menu.
