  • To prepare tasty stir-fried noodles, I selected my favorite vegetables: red onion, scallion, carrots, zucchini, red bell pepper, and fresh ginger for an extra touch of flavor. This recipe is so versatile: customize it with your favorite vegetables, like mushrooms. Mushrooms, for instance, are a great addition to create a unique dish every time. The contrast between the crunchy vegetables and the soft noodles is simply irresistible!

  • Next, prepare the chicken: cut it into strips and brown it in a non-stick pan with 2 tablespoons of extra virgin olive oil. Once golden on all sides, add the ginger slices and continue cooking until the chicken is well browned. At this point, add the onion and scallion and proceed with the preparation of my stir-fried noodles.

  • At this point, add all the other vegetables, sauté them for a few minutes with the chicken, onion, and ginger, and immediately add the soy sauce and oyster sauce. Don’t worry if you don’t have oyster sauce because you can add more soy sauce, tablespoon by tablespoon until you find the right savoriness. Cover everything with a lid and cook on low heat for about ten minutes. Don’t worry about the cooking because the vegetables will cook with the steam from the water they release in the pan.

  • With gentle steaming, under a lid, the vegetables will retain their crunchiness. After a few minutes, remove the lid, add the fresh bean sprouts, and cook for another 5 minutes, just enough time to scald them and keep them crunchy.

  • While the vegetables and bean sprouts cook, let’s focus on the pasta. Bring plenty of salted water to a boil and cook the buckwheat noodles according to the package instructions. Remember that this type of pasta, like many others, often requires rinsing under cold water after cooking. Always check the specific instructions of the product you’ve chosen.
