A tasty fish dish, the baked salmon fillets with zucchini.
This is a very fresh and light main course, as well as easy and quick to prepare. You can use both fresh and frozen salmon fillets. In the latter case, you can also bake them directly in the oven without defrosting. Follow the recipe, but bake for 30 minutes instead of 20 minutes.
In this recipe, the salmon fillets are baked, keeping their delicate flavor and soft texture intact. The zucchini, on the other hand, add a note of freshness and crunch to the dish. To prepare this delicious combination, cut the zucchini into strips, adding the cherry tomatoes in wedges. Dress everything with extra virgin olive oil, dill, parsley, salt, and pepper.

Ingredients for Baked Salmon Fillets with Zucchini
- 4 salmon fillets
- 2 zucchini
- 10 cherry tomatoes
- 1 sprig parsley
- 1 tablespoon dill
- 1 cup white wine
- 3 tablespoons extra virgin olive oil
- 3 pinches salt
- 1 pinch pepper
Preparation of Baked Salmon Fillets with Zucchini
Wash and trim the zucchini. Then cut them into strips (1). Wash the cherry tomatoes, dry them well, and cut them into wedges (2). Lightly salt them. Line a baking sheet with parchment paper; place the salmon fillets on it, skin and bones removed (3)
Add the cherry tomatoes (4) and the zucchini (5). Dress with extra virgin olive oil, adjust salt and pepper. Add the chopped parsley and dill; finally, pour in the white wine. Bake the salmon fillets with zucchini for 20 minutes at 392°F (6).
Serve hot.

Bake the salmon fillets in the oven as per the recipe, but wrapped in a sheet of aluminum foil. Leave a slight opening as a vent. Bake at 356°F for 30 minutes.
