Ingredients for Cherry Charlotte

  • 2/3 cup flour
  • 1/2 cup potato starch
  • 1/2 cup sugar
  • 3 eggs
  • 3 tablespoons water
  • 1 packet vanillin
  • 1 packet baking powder
  • 15 oz cherry jam
  • 1 cup heavy whipping cream
  • 3 egg yolks
  • 1/3 cup sugar
  • 1 tablespoon potato starch
  • 0.4 oz gelatin sheets
  • 1 packet vanillin
  • 1 cup milk

Preparation of the Cherry Charlotte

  • Separate the egg whites from the yolks and beat the yolks with the sugar, vanillin, and water. Use an electric mixer and whisk until you get a frothy mixture.

    Gradually add the sifted flour and potato starch.

    Then, beat the egg whites until stiff and fold them into the batter. Finally, add the sifted baking powder and continue mixing for 5 minutes.

    Pour the mixture onto a baking sheet, previously greased and lined with parchment paper. Smooth it out and bake at 392°F, for 10 minutes.

    Invert the sponge cake onto a cloth sprinkled with powdered sugar and remove the parchment paper.

    Now spread the cherry jam on the base and roll it up, using the cloth to help. Refrigerate for 30 minutes.

  • Mix the yolks with sugar, vanillin, and potato starch. Then pour the hot milk in a thin stream and heat the sauce without bringing it to a boil.

    Add the soaked and squeezed gelatin and let it cool.

    When the sauce is thick, fold in the whipped cream. Save a little cream for decoration.

  • Cut the roll into slices of the same thickness and use them to line a mold covered with plastic wrap.

    Pour the vanilla sauce into the mold and smooth it out. Cover with plastic wrap and refrigerate for 6 hours.

    Invert the cake onto a serving plate and decorate with dollops of the remaining cream and candied cherries.

    Keep the Cherry Charlotte refrigerated until serving.

Storage

The Cherry Charlotte can be stored in the fridge, in a suitable container, for 3-4 days.
