Ingredients for Chicken and Rosemary Meatballs

  • 14 oz ground chicken
  • 3.5 oz stale bread
  • 2 eggs
  • 1 tbsp rosemary
  • 1 oz grated parmesan
  • 3 pinches salt
  • as needed olive oil

Preparation of Chicken and Rosemary Meatballs

  • Remove the crust from the bread, cut the crumb into cubes, and blend it in the mixer.


    In a bowl, mix the ground chicken with the blended crumb, grated parmesan, eggs, rosemary, and salt. Mix the ingredients well with your hands until you get a homogeneous mixture.

  • Now, take a small amount of mixture and form a ball with your hands. Continue making meatballs until the mixture is used up.

    Place them on a plate and cover with cling film. Then, let them rest in the refrigerator for at least 30 minutes.

  • After the half hour, heat the oil (I used olive oil for frying, and I recommend it because the result is excellent!) in a high-sided pan.

    Dip the meatballs a few at a time and let them brown well.

  • Then, drain them on a tray with absorbent paper and serve immediately.

  • If you prefer a lighter cooking method, place the meatballs on a baking sheet lined with parchment paper and drizzle with extra virgin olive oil.

    Bake at 392°F (static) or 356°F (fan) for about 20-25 minutes, turning them halfway through for even browning.

Storage

The chicken and rosemary meatballs keep in the fridge for 2-4 days, stored in an airtight container. When ready to eat, reheat in the oven at 320°F for about ten minutes or in a non-stick pan over low heat.
