Ingredients for Coconut Cream Cookies

  • 1/3 cup coconut flour
  • 1/4 cup cornstarch
  • 3 tbsp sugar
  • 1 1/4 cup water
  • 8 Digestive cookies
  • 1/3 cup shredded coconut

Preparation of Coconut Cream Cookies

  • In a saucepan, dissolve the cornstarch in the water. Then, add the sugar and coconut flour. Mix the ingredients well and place on the stove.

    Cook over moderate heat until the mixture thickens. Then, remove the cream from the heat and let it cool.

  • Put the coconut cream in a piping bag and fill 4 cookies. Make a thick layer and close with the remaining 4 cookies, pressing lightly in the center.

    Decorate the cookies by rolling them in shredded coconut along the edges.
    Now, place the cookies in the fridge for 15 minutes and serve.
