Ingredients for Creamy and Simple Pasta and Potatoes
- 12.7 oz pasta
- 1.76 lbs potatoes
- 2 cups vegetable broth
- 1 shallot
- 1 bunch parsley
- 2 cherry tomatoes
- 3 pinches salt
- 4 tablespoons extra virgin olive oil
- 1 oz grated parmesan cheese
Preparation of Creamy and Simple Pasta and Potatoes
Peel the potatoes, rinse them under running water, and pat them dry: Then, cut the potatoes into cubes.
In a pan, sauté the finely chopped shallot with three tablespoons of oil, and add the potatoes. Add salt and a handful of chopped parsley; let it season for a few minutes.
Now also add the two cherry tomatoes, cut in half, and gradually pour in the hot vegetable broth, stirring gently. Cook over moderate heat, adding more broth as it dries up.
Continue cooking for about 20 minutes. Until the potatoes are softened, and part of them become creamy.
Meanwhile, boil the pasta al dente in plenty of salted boiling water. Drain the pasta and set aside a little cooking water.

Tip
