Ingredients for Escarole Pizza with Puff Pastry
- 2 rolls puff pastry
- 2.2 lbs smooth escarole
- 3.5 oz black olives
- 1.75 oz capers
- 4 fillets anchovies in oil
- 1 clove garlic
- 3 tbsps extra virgin olive oil
- 3 pinches salt
- 1 pinch pepper
- 1 egg yolk
- 1/4 cup white wine (optional)
Preparation of Escarole Pizza with Puff Pastry
Wash the escarole under fresh running water and let it dry well, then cut it (1).
In a pan, brown the garlic clove with a little oil and the anchovies over low heat (2). When the anchovy fillets have crumbled, add the escarole. Season with salt and pepper to taste and add the white wine (3); cook over moderate heat for about 15 minutes.
After this time, the escarole will have wilted, and you can add the olives and capers (4). Cook for another 10 minutes, raising the heat. Then, remove the pan from the heat and let it cool.
Take the rolls of puff pastry from the fridge and use one to line a rectangular baking sheet, lined with parchment paper. Prick the surface of the pastry with a fork (5) and fill it with the cooled escarole, spreading it evenly (6).
Cover everything with the second roll of pastry, sealing the edges well with a fork (7).
Finally, brush the surface of the pizza with a lightly beaten egg (8) and bake in a preheated oven at 375°F for 30 minutes.
