Today I present to you the delicious recipe of fried green peppers, friarielli or friggitelli, whatever you want to call them.
This is one of the traditional dishes of Campanian cuisine. These are small green peppers (dwarfs), with a sweet flavor that are fried (hence friarielli) and mixed with tomatoes.
It’s a very tasty and simple dish to make, which can be served as a side dish with a cutlet or fried eggs. But they are also delicious between two nice slices of bread!

In the recipe, I’ll show you how to clean the peppers, so they stay intact and free of the characteristic seeds.

Ingredients for Fried Green Peppers
- 2.2 lbs green peppers
- 14 oz peeled tomatoes
- 1 clove garlic
- 10 leaves basil
- to taste extra virgin olive oil
- 4 pinches Salt
Preparation of Fried Green Peppers
Wash the green peppers and dry them with a cloth (1). Remove the pepper’s stem and, with the help of a knife with a fine point, remove the seeds inside, gently scraping the cavity (2).
Rinse the peppers again under running water, both outside and inside, and let them dry well by laying them on a dry cloth.
In a pan, heat the olive oil and fry the peppers, without burning them.
Use a slotted spoon to drain them on a tray lined with absorbent paper.
In the same pan where you fried the peppers, sauté the garlic clove and add the peeled tomatoes. Cook over moderate heat until they crumble. Add salt.
Add the peppers to the tomatoes and gently stir with a spoon. Adjust salt if necessary, and cook for another 5 minutes on low heat.
Finish the recipe by adding fresh basil leaves.
