Ingredients for Pasta with Fried Pumpkin and Sage

  • 14 oz pasta
  • 1 lb pumpkin
  • 10 cherry tomatoes
  • 1 clove garlic
  • 1 tbsp sage
  • 3 tbsps extra virgin olive oil
  • 1 cup white wine
  • 1 pinch dried chili pepper
  • 4 pinches salt

Preparation of Pasta with Fried Pumpkin and Sage

  • Peel the pumpkin and dice the flesh.

    Wash the cherry tomatoes, dry them well, and chop them into cubes, removing the seeds.

  • Heat the extra virgin olive oil in a non-stick pan. Add the diced pumpkin, garlic, and sauté for 1 minute over medium heat.

  • Then, pour in the white wine and continue cooking over medium heat until it evaporates. Stir occasionally. Season with salt and chili pepper.

  • Finally, add the cherry tomato cubes. Adjust the salt and cook for another 5 minutes.

  • Meanwhile, cook the pasta al dente in a pot with plenty of boiling salted water. Drain it and transfer it to the pan with the pumpkin. Let it season for a few minutes and add the sage.

    Serve immediately.
