Ingredients for Pasta with Tuna and Zucchini Cream

  • 4 zucchini
  • 5 oz tuna
  • 2 oz pine nuts
  • 2 bunches parsley
  • 4 tablespoons extra virgin olive oil
  • 3 pinches salt
  • 12 oz mezze maniche rigate

Preparation of Pasta with Tuna and Zucchini Cream

  • Wash and trim the zucchini. Then cut them in half and into chunks.

    Blanch the zucchini in a saucepan with boiling salted water for 5 minutes.

    Place them in a blender with the pine nuts, parsley, and three tablespoons of extra virgin olive oil.

    Add a few pinches of salt and blend until you obtain a smooth and thick cream. If necessary, add a little water.

    Taste and check if you need to adjust the salt.
