And if I say pizza strudel, a delicious and versatile recipe, what do you imagine?
A fragrant and golden shell of leavened dough, enclosing a rich and stringy filling. The alluring aroma of freshly ripened tomatoes mingles with the intense fragrance of fresh basil and melted mozzarella, and a special ingredient, grilled eggplants, to make it even more intriguing. A symphony of aromas that captures the senses.
The soft and velvety texture of the eggplants perfectly complements the hearty taste of the mozzarella and tomato. Each slice of eggplant, delicately grilled, adds an extra touch to this already delicious dish.
The pizza strudel embodies the essence of Italian tradition, revisited in a creative and enveloping way. A delightful version to serve as an appetizer but also to enjoy as a quick main course. To prepare it, you can use a ready-made pizza base (easily found in the supermarket’s refrigerator section) if you’re short on time. Or you can make the dough yourself, or alternatively, you can buy the so-called bread dough from your baker.
In this recipe, I chose a very traditional filling, but the options are virtually endless. Unleash your imagination and taste. In the recipe, you will also find my preparation for the pizza dough. I recommend following it, as it has always given me great satisfaction!

Ingredients for Tasty Pizza Strudel Recipe
You can prepare this recipe with either ready-made pizza dough or homemade dough; in this case, I recommend making a 1 lb dough. Follow the recipe here
- 1 roll pizza dough
- 1 cup tomato sauce
- 7 oz mozzarella
- 6 slices eggplants, cooked, grilled
- 6 leaves basil
- 1 tbsp extra virgin olive oil
- 2 pinches salt
- 1 tbsp water
Preparation of the Tasty Pizza Strudel Recipe
Roll out the pizza base.
Spread the tomato sauce, the slices of eggplants, the mozzarella cut into cubes (do this operation beforehand to remove excess water), and the torn basil leaves.
Salt and drizzle with a little olive oil. Then, form the strudel by rolling the rectangle onto itself and sealing the ends.
Place the strudel on a baking tray lined with parchment paper and brush the surface of the pizza strudel with a mix of oil, water, and salt.
Make small cuts on the surface (each 1 inch apart) with a fine-tipped knife.
Bake at 400°F (in a preheated oven) for about 20-25 minutes or until golden brown.
Serve the pizza strudel cut into thick slices and enjoy your meal!
Prepare the pizza dough and let it rise according to the recipe.
When it has doubled in volume, roll out the dough on a lightly floured work surface. Then form a rectangle with a thickness of 1/4 inch.
Proceed according to the recipe.
Storage
The pizza strudel can be stored in the refrigerator for up to 2-3 days, wrapped in plastic wrap or stored in an airtight container. Before consuming, slightly reheat it in a preheated oven at 320°F for about ten minutes.
Alternatively, the pizza strudel can be frozen for 1 month. Before freezing, wrap each portion individually in plastic wrap and place them in a ziplock food bag. To consume, thaw in the refrigerator overnight and then reheat in the oven before serving.
