Ingredients for Potato and Radicchio Puff
- 1 package puff pastry
- 3 potatoes
- 1 head radicchio
- 2 eggs
- 200 ml heavy cream
- 1 shallot
- 1 pinch nutmeg
- 50 ml white wine
- 4 pinches salt
- 4 tablespoons extra virgin olive oil
Preparation of the Potato and Radicchio Puff
Wash the potatoes, place them in a pot with cold and salted water. Cook them for 15 minutes. Once done, drain them and let them cool.
Carefully wash the radicchio leaves and, after drying them with a paper towel, cut them into strips. In a pan, heat 3 tablespoons of extra virgin olive oil with the finely chopped shallot. Once it has browned, add the radicchio strips, lightly salt them, and sauté for 5 minutes. Then, pour in half a glass of white wine, let it evaporate and cook for another 10 minutes. Remove the pan from the heat.
In a bowl, beat the eggs with a fork, add a pinch of salt and a pinch of nutmeg.
Then add the liquid cream.
Mix the ingredients well and add the slightly cooled radicchio strips.
