The rustic radicchio, porcini mushroom, and speck is a simple and appetizing preparation. It is a savory pie filled with radicchio, porcini mushrooms, speck, and mozzarella.

Ingredients for Rustic Radicchio, Porcini Mushroom, and Speck
- 1 roll puff pastry
- 8 leaves radicchio
- 3.5 oz porcini mushrooms
- 3 slices speck
- 3.5 oz mozzarella
- 1 clove garlic
- 2 tablespoons extra virgin olive oil
- to taste salt
- 1/2 cup white wine
- 1 egg yolk
- 1 tablespoon sesame
Preparation of Rustic Radicchio, Porcini Mushroom, and Speck
Wash and dry the radicchio leaves. Cut them into small pieces.
Cut the speck into strips.
In a pan, brown the speck. Then, add the radicchio and mix for 5 minutes over moderate heat.
Remove from heat and set aside.
In the same pan, sauté the garlic clove with two tablespoons of oil. Add the porcini mushrooms cut into cubes. Add salt and cook, still over moderate heat, for about ten minutes.
Now pour the radicchio and speck into the mushrooms. Adjust the salt and deglaze with the white wine.
Remove from heat and let cool.
Roll out the puff pastry. Poke the surface with the prongs of a fork.
Then, with a fine-pointed knife, score the pastry in the four corners, with a cut equal to a finger’s width.
Next, cut diagonally into strips about 0.4 inches wide from both long sides of the pastry.
Spread the filling in the center of the pastry and add the mozzarella, cut into cubes.
Start closing the pastry, overlapping the filling with the two ends, top and bottom. Then start closing the cut pastry strips over the filling, alternating: between left and right.
Proceed in this way until the pastry is completely closed and forms a braid.
Place the rustic radicchio, porcini mushroom, and speck on a baking sheet lined with parchment paper, brush the surface with the beaten egg yolk. Finish by distributing sesame all over the surface.
Bake in a preheated oven at 392°F, for 25 minutes.
