Ingredients for Savory Tart with Artichokes, Scamorza and Cooked Ham
- 1 sheet puff pastry
- 4 artichokes
- 2 oz cooked ham
- 5 oz scamorza cheese
- 1 bunch parsley
- 8 leaves basil
- 1 tbsp dried parsley
- 1 clove garlic
- 1/2 cup (≈4 fl oz) white wine
- 3 tbsp extra-virgin olive oil
- 3 pinches salt
- 1 juice of 1 lemon
Preparation of the Savory Tart with Artichokes, Scamorza and Cooked Ham
Clean the artichokes, removing the stem and the tougher outer leaves. Then cut off the tips and remove the fuzzy choke.
Next, place them upside down in a bowl with water acidified with the juice of one lemon. Let them soak for about 30 minutes. Drain the artichokes and pat them dry with paper towels.
Now cut them into wedges. In a pan, lightly brown one clove of garlic in three tablespoons of extra-virgin olive oil. Add the artichokes and cook over high heat for a few minutes. Season with salt and deglaze with the white wine.
Lower the heat and add the chopped parsley and basil. Mix well and add a little water. Continue cooking for another 10 minutes. Then turn off the heat and let cool.
Roll out the rectangle of puff pastry on a baking sheet lined with parchment paper. Cut a strip about 3/8 in (1 cm) thick from both long sides of the base (these will be used for decoration).
Prick the bottom with the tines of a fork and layer the cooked ham and part of the scamorza, sliced. Add the artichokes and a little chopped parsley. Finish with the remaining scamorza, cut into cubes.
Fold the edges of the pastry and trim them with the fork tines. Then decorate with the reserved pastry strips. Brush the edges and strips with a little oil.
Bake the savory tart with artichokes in a preheated oven at 392°F for 25-30 minutes.
