This is the perfect dish for cold days because it’s invigorating and substantial, thanks to the many nutritional properties contained in cauliflower. Due to its high vitamin C content, cauliflower is, in fact, recommended for colds; its low sodium content makes it suitable for low-sodium diets for those with high blood pressure, nephritis, or fluid retention. Additionally, it is very useful in low-calorie diets.

Ingredients for Tasty and Nutritious Pasta and Cauliflower Recipe

  • 12.7 oz ditalini pasta
  • 10.6 oz cauliflower
  • 1 dried chili pepper
  • 1 clove garlic
  • 2 tbsp tomato purée
  • 1 bunch parsley
  • to taste vegetable broth
  • to taste salt
  • 3 tbsp extra virgin olive oil

Preparation of Tasty and Nutritious Pasta and Cauliflower Recipe

  • Clean and wash the cauliflower, remove the core and tough leaves.

     

    Then, cut it into small florets and boil them in a pot of plenty of salted boiling water for about ten minutes.

     

    Drain and pat dry the cauliflower.

  • In a pan, sauté a garlic clove in three tablespoons of extra virgin olive oil.

     Add the crumbled chili pepper and after a couple of minutes the cauliflower. Mix them for a few minutes.

    Lightly salt, and add a couple of ladles of vegetable broth.

     

  • Add one or two tablespoons of tomato purée, stir gently, cover the pan and continue cooking over moderate heat for another ten minutes.

  • Meanwhile, bring the water to a boil to cook the pasta.

    Cook the pasta al dente and, after draining it, pour it directly into the pan with the cauliflower.

    Mix the ingredients and complete the dish with fresh chopped parsley.

     

  • Serve immediately and enjoy your super tasty pasta and cauliflower recipe.
