Ingredients for Vegetable Pizza Rolls

  • 1 roll pizza dough
  • 2 potatoes
  • 2 bell peppers
  • 1 eggplant
  • 10 cherry tomatoes
  • leaves basil
  • 1 clove garlic
  • 3 pinches salt
  • to taste extra virgin olive oil

Preparation of Vegetable Pizza Rolls

  • Wash and dry the vegetables. Then, peel the potatoes and dice them. Clean the bell peppers, removing the seeds and white filaments, and slice them into strips; cut the eggplants into cubes.


    In a high-sided pan, heat some oil. Fry the vegetables separately, starting with the potatoes. Cook them until golden and drain them on a plate with absorbent paper. Then fry the bell peppers and eggplants. Drain both on absorbent paper. Lightly salt the vegetables.


    In the same pan, sauté a clove of garlic in the residual oil. Add the cherry tomatoes and salt. Cook for 5 minutes over moderate heat, stirring occasionally. Now, add the vegetables, adjust the salt and finish with the basil leaves.

  • Roll out the pizza base on the work surface and distribute the vegetables, leaving the edges a little free. Form a roll and cut it into 12 slices.

    Place the rolls on a baking sheet covered with parchment paper and bake in a preheated oven at 392°F (200°C) for 15 minutes.

Storing Vegetable Pizza Rolls

Vegetable pizza rolls can be stored in the refrigerator, in an airtight container, for about 2 days.

Before enjoying them, I recommend reheating them in the oven for a few minutes, so they become crispy again like freshly made.

You can also freeze them, preferably already cooked: just defrost them at room temperature and heat them in a hot oven for a few minutes.
