Ingredients

  • all-purpose flour
  • ricotta cheese
  • 5 tablespoons brown sugar
  • baking powder (vanilla-flavored)
  • coconut flour
  • extra virgin olive oil
  • whole chicken eggs, frozen
  • ground cinnamon
  • 6 drops rum flavor
  • powdered sugar with vanilla flavor

Steps

  • In a large baking dish, mix the ricotta and brown sugar.

    Add the cinnamon, rum flavor, and baking powder.

    Incorporate the oil and raisins.

  • Wash, peel, and cut the apples into small pieces.

    Add the apples to the mixture.

  • Lightly beat the eggs and add them to the batter.

    Add the coconut flour and regular flour, mixing well.

  • Line a baking sheet with parchment paper.

    Using a spoon, place the dough on the baking sheet, leaving about 1 inch between each cookie.

  • Preheat the oven to 356°F (static) or 338°F (fan).

    Bake the cookies for 15 minutes. Don’t worry if they don’t turn golden brown, they will remain fairly light.

  • Let the cookies cool and dust them with powdered sugar before serving them on a nice serving tray.

Storage tips and personal notes

These sweet apple cookies last about a week (if you manage to keep them that long without eating them first). They should not be stored in the fridge.

You can make different versions by replacing the coconut flour with oat or almond flour, adding candied orange peels instead of raisins, or using orange flavor instead of rum.

If you don’t have large eggs, note that they weigh about 130/140 grams, so replace them accordingly, otherwise the dough may appear too hard.
