Ingredients
- 4 Eggs (large)
- 6 oz Brown sugar
- 1 1/2 cups All-purpose flour
- 1 packet Baking powder
- 4 Annurca apples
- as needed Vanilla powdered sugar
- 2 tsps Water (very cold)
- 1 Lemon zest
- 1 tsp Vanilla extract
- 1 Lemon juice

- 1 Spatula

Preparation
Separate the yolks from the whites.
Whip the yolks with half of the sugar.
Add the grated lemon zest.
Separately, firmly whip the egg whites with the other half of the sugar, two tablespoons of very cold water, and a pinch of salt.
Cut the apples into small pieces, soaking them in lukewarm water and the juice of half a lemon to prevent them from browning.
Mix the flour with the baking powder.
Add the flour and baking powder mixture to the whipped yolks.
Add the apple pieces after draining them.
Add the vanilla essence.
Finally, gently mix the batter with the whipped egg whites, always moving from bottom to top.
Place a sheet of parchment paper on the pan and pour the batter in carefully.
Bake in a preheated oven at 356°F for forty minutes.
Sprinkle generously with vanilla powdered sugar using a sifter, as soon as it’s cold, and serve.
Notes
These quantities are for a pan with a 10-inch diameter. It keeps well for at least 4 days. I baked it in a gas oven, so be careful if using an electric or convection oven to reduce the temperature or cooking times.
Personal advice:
As advice, I must say that having experimented with different types of apples, it turns out good especially with other very sweet apple types, like Fuji or Pink Lady.
