Today I want to propose an idea more than a recipe for a buffet and I would like to give you some advice that has been useful to me during the preparation of large buffets. Here’s how to prepare a perfect caprese for a buffet. As mentioned earlier, many know how to prepare a classic caprese by slicing tomatoes and mozzarella and arranging the slices alternately on a serving plate, naturally seasoned with oil, salt, pepper, and if you like, oregano. But today I want to propose a more scenic caprese for a buffet suitable to be served as finger food.

- 5 packages cherry mozzarella balls (12 mozzarella balls per package)
- 120 cherry tomatoes
- to taste basil (fresh)

The preparation of your caprese for the buffet is very simple. Start by pouring all the mozzarella balls into a colander so that they lose all the excess water. Now wash your cherry tomatoes well and dry them. At this point, start composing your caprese for the buffet by skewering a cherry tomato, a mozzarella ball, and finish with a second cherry tomato.
Then arrange your caprese skewers on a serving plate, placing them next to each other until you have used all the ingredients. With these quantities, you will get 60 caprese skewers for the buffet.
At this point, you can serve them like this with a few fresh basil leaves or season them with oil, salt, and oregano. I prefer not to season them and make a separate emulsion of oil, salt, oregano, and pepper, put them in a separate bowl, and everyone can season their caprese only if they want.
