As promised, here is the second recipe made with the leftover batter from my CHRISTMAS PLUMCAKE. Yes, because when you cut out various tree shapes with the cookie cutter, which will be inside the plumcake, you will have quite a bit of leftover cake that can actually be enjoyed as is, but if you feel like it, you can also make these cute Christmas cake balls and serve them as a dessert. Don’t you think they’re adorable? Now let’s see together how to prepare them.

Ingredients
- 7 oz plumcake (already baked, green color)
- 3 tbsp peanut butter (about 2 heaping tablespoons)
- as needed lemon glaze
- as needed sugar sprinkles (as desired for decoration)
Steps
The recipe to make these Christmas cake balls is very simple: start by putting the leftover cake in a bowl and crumble it as finely as possible.
Then add the peanut butter at room temperature and start kneading with your hands until you get a sticky dough and begin forming balls.
ATTENTION the amount of peanut butter depends on the weight of the leftover cake, so I recommend weighing it and adding or not adding more peanut butter as needed. Once you have formed all the balls, place them on a tray and refrigerate for at least 30 minutes.
After this time, you can decorate your Christmas cake balls with lemon glaze or melted dark chocolate and themed sugar sprinkles. Then store in the fridge until ready to serve. They are delicious.
I used peanut butter instead of the classic hazelnut or almond spread because the cake itself is already quite sweet, so the peanut butter with its sweet and bitter taste gave these cake balls a unique flavor that I recommend to everyone.
If you’re not a fan of peanut butter, you can obviously use a hazelnut or almond spread. However, it may be that the final color of the Christmas cake balls will no longer be a bright green as you see in my photos.
