Christmas Plumcake

Ho ho ho Christmas is coming, and what could be better for a holiday breakfast than a Christmas plumcake? Look how beautiful and spectacular, each slice reveals a lovely Christmas tree, making it perfect for the most wonderful time of the year. Prepare it with your children, they’ll have a blast. It’s very simple to make and doesn’t require special skills. The only care needed is to prepare the double batter of the classic plumcake, but you’ll also get 2 recipes that you’ll find at the end.

Ingredients

  • 6 eggs
  • 1 1/4 cups sugar
  • 1 2/3 cups plain yogurt (or lemon yogurt)
  • 3 cups flour
  • 1 cup potato starch
  • 2/3 cup soft butter (or 3/4 cup sunflower oil)
  • 1 packet baking powder
  • 1 pinch salt
  • 1 lemon zest
  • as needed green food coloring
  • as needed lemon glaze (powdered sugar, water, and lemon)
  • as needed green Christmas sugar decorations (or to taste)

To prepare this Christmas plumcake, you’ll need two pans: the first for making the trees, which can be rectangular or square, just one 8 x 12 inches or 16 x 16 inches will be enough for 8-9 trees inside. The second is a classic plumcake pan. Lastly, a classic Christmas tree cookie cutter, preferably quite large.

Steps

As mentioned earlier, to make this Christmas plumcake, you’ll need double the ingredients for a classic plumcake, but you’ll also get a second recipe that I’ll reveal at the end. Start by whisking the eggs well with the sugar, then add the butter and continue with the yogurt, flour sifted with baking powder, and finally the grated lemon zest and some lemon juice. At this point, divide the batter into two: one part will be 1/3 of the total weight, and the second part the remainder. Add the green food coloring to the smaller batter, using just the tip of a skewer if you have good food coloring, and mix until you get a nice intense green color. Pour the green batter into the 8 x 12-inch pan, level it, and bake in a static oven for about 15-20 minutes.

  • When the batter is well-cooked, let it cool and turn it over onto a work surface. Then, using a tree cookie cutter, cut out as many trees as you can; you’ll get at least 8-9. Now take the plumcake pan and pour 1-2 tablespoons of “white” batter, then arrange the green trees side by side along the entire length of the pan. Pour the rest of the batter all around the trees. At this point, bake for about 1 hour at 355°F in a static oven.

  • Halfway through baking, cover the plumcake with aluminum foil and complete the baking. Make sure to do the toothpick test before removing from the oven. As soon as your plumcake is ready, prepare a quick lemon glaze by mixing 5 tablespoons of powdered sugar with 2 tablespoons of hot water and a few drops of lemon, then pour it over the plumcake and decorate with Christmas sugar decorations.
