Those of us who grew up in the 1980s surely know DORAYAKI, little sweets made famous by a Japanese cartoon called Doraemon. They are treats very similar to pancakes, filled with adzuki red bean paste, which I also found at my trusted Asian shop. They’re really very simple to make and perfect for breakfast or as a snack—even for the little ones. Of course, if you can’t find red bean paste you can fill them as you like with hazelnut spread or whipped cream, another classic Japanese variation. Now let’s see together how to prepare dorayaki in the following recipe.

Ingredients
- 2 cups 00 flour (all-purpose flour)
- 1 1/4 cups powdered sugar (confectioners' sugar)
- 3/4 cup water
- 2 eggs
- 1 tbsp honey
- 3/4 tsp baking powder
- as needed vegetable oil
- 7.1 oz adzuki red bean paste (or filling of your choice)
Steps
Begin preparing your Dorayaki by pouring the flour, powdered sugar and baking powder into a large bowl. Mix and gradually add the eggs, honey and finally the water, whisking everything with a whisk until you obtain a smooth, lump-free batter.
At this point, brush a skillet with a little vegetable oil and pour half a ladleful of batter. I use a pancake pan, but you can use a regular pan and make 2 pancakes at a time. Let cook for about 2 minutes; when the first bubbles begin to form on the surface of the pancakes, gently flip them with a spatula and cook for another 2 minutes per side. When you’ve made all the pancakes you should get about 12–14 pieces. Take the red bean paste and spread it generously on one pancake and cover it with a second pancake—your dorayaki are now ready to be enjoyed.
