Ingredients
- 1.1 lbs frozen peeled shrimp
- 1 cup frozen peas
- 1 cup cherry tomatoes
- 1 clove garlic
- 2 tbsps Genoese pesto
- 2 tbsps olive oil
- 12 oz long pasta (I used linguine)

- to taste sweet paprika
Steps
Start preparing the linguine with shrimp and vegetables by boiling water for the pasta. Then wash the cherry tomatoes and cut them in half. In a pan, pour a drizzle of oil, add the whole garlic and let it brown for about 3-4 minutes. At this point, add the peas, lower the heat and let them soften, continue by adding the chopped cherry tomatoes and let them cook, adding a bit of pasta cooking water.
At this point, cook the pasta in salted water until 3-4 minutes before the cooking time indicated on the package. Meanwhile, the vegetables will be well cooked, so I recommend adding the shrimp and another 1-2 ladles of pasta cooking water. The pasta will also be al dente, so add it to the pan and let it sauté with the vegetables and shrimp. Finally, add the pesto and mix well. Your linguine with shrimp and vegetables are ready to be served, enjoy your meal.
