Pumpkin Buns

I love pumpkin buns, they are very cute, but also soft for days. Yes, because the pumpkin in the dough makes these buns particularly soft and delicious. They can be eaten as classic bread, so with a bit of jam or hazelnut cream as well as with cold cuts, but I particularly like them when I serve them with a warm and steaming pumpkin soup. Pumpkin buns make lunch or dinner tastier, try them too. But let’s see together how to prepare them in the following recipe.

Ingredients

  • 3 1/3 cups all-purpose flour
  • 3/4 cup semolina flour
  • 1 1/4 cups warm milk (lactose-free)
  • 1 tsp salt
  • 1/2 cup pumpkin puree
  • 2 tsp compressed yeast
  • as needed peanut oil

Steps

The first thing to do to prepare the pumpkin buns is to prepare the pumpkin puree. I have steamed the Butternut squash cut into cubes, make a little more to obtain 130g of puree, if you have any leftover, I’ll post another delicious recipe you can prepare at the end. Let the pumpkin puree cool well and start preparing your pumpkin buns.

  • Pour the two flours into a bowl and mix, separately dissolve the yeast with a little milk and pour it over the flour. Start kneading, adding the remaining milk little by little and finally the salt. When all the ingredients are well combined, spread the dough and add the pumpkin puree and knead for another minute until everything is homogeneous and compact. I recommend a stand mixer because the dough will be quite sticky, but if you want, you can also knead by hand. Now place the dough in a bowl and let it rise until doubled, it will take about a couple of hours. Now weigh the final dough and make balls of about 70g each. You will get about 7-9. Line a baking tray with parchment paper, take some kitchen twine and cut 5 pieces of about 8 inches each and cross them to make a star shape, brush the twine with oil. You will need the 5 twines for each bun. Then attach the ends of each twine together to form a pumpkin shape.

  • After doing this for all the buns, you can brush your pumpkin buns with milk if you like and bake them in a preheated oven at 350°F for about 30 minutes. When they have a nice golden color, they are cooked. As soon as they are out of the oven, cut the twine and gently remove it and voila, your buns are ready to be enjoyed.
