- Difficulty: Very Easy
- Cost: Very Cheap
- Preparation time: 15 Minutes
- Portions: 4
- Cooking methods: Air Frying
- Cuisine: Italian
- Seasonality: Spring, Summer
Ingredients
- 4 zucchini
- 14 oz cherry tomatoes
- 1 clove garlic
- 2 tbsp olive oil
- to taste salt
- to taste pepper
- to taste basil
Tools
- 1 Air Fryer
- 1 Immersion Blender
Steps
To start, you need a tool that cuts zucchini into spaghetti shape, which are now widely available and quite affordable.
Start by washing and drying the zucchini, cut off the ends, and use the tool to form your spaghetti. Place them in a bowl and sprinkle with a little salt. Now focus on preparing the sauce: wash the cherry tomatoes, dry them, and cut them in half, then place them in a pan that fits in your air fryer. Add the whole garlic, sprinkle with half a tablespoon of oil, salt, and pepper, and let cook in the air fryer for about 15 minutes at 356°F.
If you don’t have an air fryer, you can put the pan in the oven, but it will take about 10 more minutes than the fryer to achieve the same effect. At this point, dry the zucchini spaghetti with paper towels. When the cherry tomatoes are done, pour the pan’s contents into a tall, narrow container, add the excess oil and basil, and blend until you have a sauce. Now pour the sauce and zucchini spaghetti into a pan and let cook for about 8-10 minutes. After this time, the zucchini spaghetti will remain quite crunchy. If you want them very soft, let them cook for a few more minutes. Once ready, adjust with salt and pepper and serve hot, even with parmesan if you like, and enjoy your meal.
