Arugula pesto is a very easy and quick sauce to prepare, it’s tasty, fresh, and slightly bitter. It’s also very versatile, great for dressing pasta but will also surprise you simply spread on crostini, fabulous paired with cherry tomatoes on bruschetta, try it also with confit tomatoes!

Ingredients
- 2 cups arugula (washed and dried)
- 1/3 cup olive oil
- 1/4 cup almonds
- 1/3 cup grated Grana Padano
- 1/2 clove garlic
- to taste salt

Steps
Wash and dry the arugula if necessary, if you get the bagged kind, it’s not needed.
Place all ingredients in the glass of the immersion blender and start blending until you have a smooth cream.
Your pesto is already ready!
Store it in the fridge in a tightly sealed jar and covered with a little olive oil, if you wish you can also freeze it and have it ready when needed.
