Ingredients
- 1 1/2 cups Gluten-Free Cake Flour
- 1/3 cup Gluten-Free Potato Starch
- 3 eggs (at room temperature)
- 1 cup brown sugar
- 1/2 cup vegetable oil
- 1 packet baking powder
- 1 lemon
- 1 pinch salt
- 1/2 teaspoon ground cinnamon (about 1/8 oz)
- 2 apples (your choice)
- 150 g plain yogurt

Steps
First of all, preheat the oven to 350°F and line a plumcake mold with parchment paper. I use one with a lid which is very convenient, but a classic one is fine too.
Peel the apples, core them, and slice them thin with a peeler. If you prefer, you can chop them into cubes. Drizzle them with some lemon juice to prevent browning, and set aside.
In a bowl, whisk the eggs with the sugar using electric whisks until they become frothy. Add the oil, yogurt, a pinch of salt, and the grated lemon zest, continuing to mix until you obtain a homogeneous mixture.
Now add the flour previously sifted with potato starch, baking powder, and cinnamon.
Finally, add the apples, saving some to decorate the top, and mix with a spoon.
Pour into the plumcake mold, decorate with apple slices, and sprinkle some brown sugar.
Bake at 350 degrees for about 55 minutes.Always use the toothpick test to check for doneness before removing from the oven.
I used the mold with a lid, baked with the lid on for the first 25 minutes, and without for the remainder.Let the plumcake cool completely before removing it from the mold and enjoying it. I recommend tasting it while it is still warm 😉
👉As always, I recommend storing the cake well-sealed in a cake container or under a dome to keep it soft for several days.
