Gluten-Free Pistachio Blondies

Gluten-free pistachio blondies are a twist on classic blondies, which are brownies but with white chocolate.

The famous American treats are generally served in squares.

In today’s recipe, I present gluten-free pistachio blondies, a super delicious combination of pistachios with white chocolate!

To be honest, I used the pistachio blondies as a base for a cheesecake, and I loved it! This recipe will be coming soon 😉In the meantime, I’ll tell you how to make Blondies and leave you some other delicious variations here👇

Ingredients

  • 3.5 oz white chocolate
  • 3.5 oz butter (for me lactose-free)
  • 2 tbsp granulated sugar
  • 2 tbsp brown sugar
  • 2 eggs (at room temperature)
  • 2.1 oz pistachio flour (if you can't find it, grind toasted pistachios into flour)
  • 2.8 oz gluten-free flour (I used Schar universal mix)
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract

Steps

  • Preheat the oven to 356°F and prepare the pan for your blondies. I used a 20 cm (8 inch) round pan because I will use it as a base for another dessert. A square pan is also fine and will be more practical if you want to cut the blondies into squares.

  • First, chop the white chocolate and melt it with the butter, either in a bain-marie or in the microwave.

    If using the microwave, be careful because white chocolate is delicate. 30 seconds at maximum power, stir and repeat if necessary.

    One at a time, add the eggs to the melted chocolate, whisking them by hand, then add the sugar, a pinch of salt, and finally incorporate the flour, pistachio flour, and baking powder.

  • Pour the mixture into the pan lined with parchment paper and bake at 356°F for 20 minutes.

    As always, do the toothpick test to check for doneness, and once baked, wait for it to cool before cutting.

    I used my pistachio blondies as the base for a super delicious white chocolate cheesecake!!

👉As always, I recommend storing the cake well sealed, in a cake carrier or under a dome, this will keep it soft for several days.
