Yes, I made gluten-free zucchini rolls!
For a while, I’ve been thinking about making zucchini bread, ever since I made pumpkin bread, which I love.
So I decided to follow my pumpkin bread recipe, a quick, simple, and really tasty and soft bread.
I used part white gluten-free bread flour and part whole grain, but if you have trouble finding whole grain, you can use only white flour.

Ingredients
- 11.3 oz gluten-free bread flour (I use Schär or Nutrifree)
- 7.1 oz whole grain gluten-free bread flour
- 1.8 cups water (at room temperature)
- 1 zucchini (About 6 oz)
- 1 tsp dry yeast
- 1 tsp honey
- 2 tbsps olive oil
- 1 tsp salt
- to taste dried oregano
Steps
First, wash, trim, and grate the zucchini. Season with salt and oregano and leave in a colander for 30 minutes to drain the water.
Dissolve the yeast in a small bowl with a little water and honey, let it rest for about ten minutes.
In the bowl of the mixer, pour the flour, start the mixer and begin adding water and the water with the yeast. After a few minutes, add the salt and the zucchini after squeezing them.
Let it knead for another 5 minutes until the dough is well combined, then cover the bowl with plastic wrap and place it in a turned-off oven with the light on to rise for about 2 hours.After the time has passed, use a spatula to take a portion of the dough, according to the size you want for the rolls, and shape it with well-oiled hands, without pressing the dough.
Place them on a baking tray lined with parchment paper.Bake at 392°F (200°C) in the lower part of the oven for 35 minutes.
For more golden rolls, switch to convection mode for the last few minutes.Remove from the oven and let cool on a wire rack.
👉 If desired, you can also freeze them once cooked, and when thawed, they will maintain excellent consistency. Reheating them in the oven or in a small oven will also restore their crunchiness.
