The Pound Cake or Four Quarters Cake is a tasty and buttery cake, very simple in ingredients and preparation.
Only eggs, sugar, butter, and flour… Its peculiarity?
You weigh the eggs and use the same weight of sugar, butter, and flour.
A perfect cake for breakfast!!

Ingredients
- 4 eggs (At room temperature (weighed shelled 7.76 oz))
- 1 cup sugar
- 1 cup butter (at room temperature)
- 1 1/2 cups gluten-free cake flour (for me Nutrifree)
- 1 packet baking powder
- 1 teaspoon vanilla extract
- 1 lemon (grated zest)
Steps
Whip the eggs with the sugar for a few minutes, add the butter which should be “creamed” and the vanilla, whip for another couple of minutes.
Now add the eggs one at a time while continuing to work with the whisks.
Finally, pour in the sifted flour with the baking powder and a pinch of salt.Pour into a 8-inch pan lined with parchment paper and bake in the oven at 356°F for 45 min.
If it tends to darken too much, cover with a sheet of parchment paper, quickly opening the oven.
As always, do the toothpick test for doneness.
