- 3.5 oz ground beef
- 1 egg
- 2 tbsp grated Parmesan
- 1 pinch nutmeg
- lemon zest (grated)
- 2 tsp extra virgin olive oil
- 1 1/4 tbsp lupin flour (or almond flour)
- 2/3 cup zucchini
- 1 clove garlic
- 1 egg white

Preparation
To prepare the Thursday keto lunch with meatballs, first put into the cup of a small food chopper with blades: 1 egg white + a sprig of parsley leaves + 1 garlic clove. Run the motor until everything is blended.
Then place the ground beef in a deep plate, then add 1 egg + 1 pinch of freshly grated nutmeg + the grated peel of 1 organic lemon + 2 tbsp of Parmesan + the chopped parsley mixture + about 1 1/4 tbsp of lupin flour (or almond flour). Mix, then using 2 teaspoons form many small meatballs (walnut-sized). As you go, place them on a tray dusted with lupin flour. Put a pan on the stovetop, add the oil, then add all the meatballs. Cook over medium heat (with a lid). Turn them often. When they are all well cooked and golden, turn off the stovetop.
While the meatballs are cooking, slice the zucchini, then grill all the slices (in a cast-iron pan or electric grill or any other method).
Simply transfer the cooked meatballs and the grilled zucchini to a plate. To dress the zucchini, you can use a drizzle of vinegar and some parsley.
The dish is ready.
