  • 2 fresh pork sausages, cooked, pan-fried (cast-iron, cooked weight about 4.2 oz (120 g))
  • 2/3 cup cucumbers (about 80 g)
  • 2 egg whites (about 2.5 oz (70 g))
  • 2 tbsp Parmesan (about 10 g)

Preparation of Thursday keto lunch

  • To make Thursday’s keto lunch, first of all you need to cook the sausages in a griddle or a cast-iron skillet or any other method is fine

    Meanwhile, beat 2 egg whites with a fork, then transfer them to a very hot mini pan greased with 1 tablespoon of oil. Cook until you get a thin omelette-like layer, then using a silicone spatula loosen it underneath and then flip it. After 1 minute of cooking, sprinkle it with 2 tbsp of Parmesan (about 10 g). Turn off the heat and keep the omelette warm in the covered pan. Just before plating, roll it up

  • At this point just transfer the well-cooked pork sausages to a plate. Add the omelette, finish with a serving of cucumbers.

    Dress everything with the remaining oil
