Ingredients

Prepare all the ingredients on your work surface that you need to make the Cake!

  • 14 tbsp butter (you can use ghee, coconut butter, peanut butter or regular butter (about 7 oz / 7/8 cup))
  • 6 tbsp erythritol (powdered)
  • Half vial vanilla extract vial
  • 3 eggs
  • 1 1/8 cup milk (if you use lupin flour; if you use type 00 flour, use about 1/2 cup + 1 tbsp (135 ml); with potato starch you only need 6 tbsp (90 ml))
  • 2 cups flour (almond or lupin flour; if you are not following a low-carb diet you can use type 00 flour or potato starch)
  • 1 packet baking powder (for cakes)
  • 2/3 cup sultana raisins (can be substituted with walnuts, almonds or hazelnuts, especially on a LowCarb diet (about 3.5 oz))
  • 1/4 cup flour (almond or lupin flour for dusting the raisins (about 0.9 oz))
  • 1/4 tsp tabletop sweetener (or Stevia *read the notes at the end of the recipe for more info)
  • 1 tbsp erythritol (powdered)
  • ground cinnamon (if desired)

The Ultra-Soft Butter Cake with no added sugars can be cut into 12 tasty slices. Also suitable for those on a low-carbohydrate diet (for Keto or diabetics, it is recommended to omit the sultana raisins from the ingredient list).

Tools and Utensils

To prepare the Ultra-Soft Butter Cake, you will need some kitchen tools. Make sure you have:

  • 1 Electric hand mixer
  • 1 24 cm springform pan
  • 1 mixing bowls
  • 1 spatula

Preparation

  • Beat the softened butter with the powdered erythritol and vanilla until creamy.
    Add one yolk at a time, mixing well with the beaters after each addition.

  • Fold in half of the lupin flour (or the chosen flour), the baking powder and 1/4 tsp (approx. 1 g) of sweetener such as pure Stevia or Dulci Light (or whatever you normally use), mixing until combined.
    Pour the milk in a slow stream and continue mixing for about 1 minute, then add the remaining lupin flour. Continue working the batter for 1 minute.
    Add the raisins (soaked for 10 minutes and then dusted with flour) and fold them in gently.
    Finally, fold in the whipped egg whites in three additions, mixing from the bottom up.
    Pour the batter into the buttered and floured pan.
