CHOCOLATE EGG PLUMCAKE 8 TABLESPOONS
A simple recipe to make a lemon-scented plumcake with Easter eggs inside, for those who have no time in the kitchen, without using a scale.
A simple recipe that is made only with a tablespoon and electric whisks (but if you don’t have them, a simple fork is fine, it just takes more patience)
A tablespoon is about 23/25 g of solids (like flour, sugar, etc.) and 18/20 g of liquids (milk, oil, etc.)
This year, I ended up with 21 Easter eggs, a crime for the stomach and teeth ahahahhaha jokes aside, really too many to eat like that: some I’ll get rid of on Sunday for Lellina’s party 😉

Ingredients
- 2 eggs
- 8 tablespoons all-purpose flour
- 8 tablespoons milk
- 8 tablespoons sunflower seed oil
- 8 tablespoons sugar
- 1 lemon (zest and juice from half)
- 1 packet baking powder
- A few pieces chocolate eggs
- to taste powdered sugar

Steps
In a bowl, pour the eggs and sugar and start mixing with a mixer. The more you mix, the more air you incorporate, resulting in a fluffy cake.
Gradually add all the ingredients a little at a time: grate the lemon zest and then squeeze half of its juice to add to the mixture.
Finally, add the baking powder and then roughly crumble the chocolate eggs by hand.
Note: I haven’t specified an amount for the chocolate, go with your feeling 😉
At this point, place the mixture in the fridge for an hour. It will have a nice rise in the oven: this step is not essential, but if you have time, I recommend it. Otherwise, you can place it directly in the oven.
Preheat the oven to 350°F (180°C), both static and ventilated. Pour the mixture into the plumcake mold and bake for 35 minutes.
In the last few minutes, do the toothpick test: insert it into the batter, if it comes out clean, it’s ready.
Let it cool well before removing from the mold (unlike me, who forgot in a hurry and broke it)
